Vermland designed the carefully crafted space of Hverdagen, a sustainability-focused restaurant that embodies the art of gathering in Copenhagen.

  • The interior for Hverdagen combines the idea of a traditional restaurant with a long-table dinner concept for friends and family. All furniture is made entirely from the same Douglas tree, designed and handcrafted by Vermland studio and joinery. Hverdagen is located next to the vibrant area Kødbyen in Copenhagen. The owners want to introduce everyday food in an experimenting and sustainable way based on 100% organic ingredients. By using simple techniques inspired by Japanese craftsmanship Vermland showcases high-end furnitures in an everyday setting.

    All furniture is special-made for the dining taking its inspiration from the existing timber frame structure combined with Vermland’s interest in Japanese joinery. By integrating dowels into the beams and columns the structure utilizes the qualities of solid wood lifting up the long table without the use of any screws.

    The client wanted to showcase some of the organic food and the fermenting process involved when making the ingredients. The shelf system covers the entire back wall in the building making it blend in with the existing wood structure.
